Oatmeal Raisin Cookies are my favorite. My grandmother was not the type to slave away in the kitchen, but we always had soft and chewy oatmeal raisin cookies . . . from the store. Today I decided that that would be no more. I am going to make homemade oatmeal raisin cookies.

Vegan Oatmeal Raisin Cookies Recipe
Yields: One Dozen


1/2 cup vegan butter
2/3 cup brown sugar
1/2 cup applesauce
1/2 teaspoon vanilla extract
1 1/2 cups quick cooking oats
3/4 cup all purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
2/3 cup raisins
1/2 cup walnuts (optional)

Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.

Cream together vegan butter, brown sugar, applesauce, and vanilla extract with a wooden spoon in a large mixing bowl.

Whisk together all purpose flour, cinnamon, baking powder, and salt in a separate mixing bowl.

Stir the dry ingredients into the wet ingredients. Then, fold in the raisins and walnuts.

Use a ice cream scooper to drop the cookie dough onto the prepared cookie sheet. Leave about 2 inches of space between each cookie. Slightly flatten each cookie for even baking.

Bake for 10-12 minutes, rotating half way through the baking time. Allow the cookies to cool on the baking sheet before serving.
