Barbecued some chicken thighs on the Pit Barrel Cooker over lump charcoal, with just a little hickory for some added smoke. Total cook time was about 50 minutes to reach my target temperature of 175ºF. The Pit Barrel Cooker rocked this cook! https://pitbarrelcooker.com/?ref=mngjc7w6ltz
Alabama White Sauce:
1 cup mayo
1/3 cup distilled vinegar
1/4 cup lemon juice
1/4 cup apple juice
2 tablespoons creamy horseradish
1 tablespoon ground black pepper
1 tablespoon spicy brown mustard
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon cayenne pepper

Bob Gibson grew up in Decatur, Alabama, and made a living as a railroad man. In 1925 he was making a living working for the railroads. Like most of us here in the YouTube BBQ community, he would barbecue on weekends. His smoked pork, chicken, and vinegar-based white sauce became so popular that he eventually decided to open a restaurant. Big Bob Gibson sold barbecue from a few different locations in the Decatur area throughout the years, but in 1952 he put down some barbecue roots, opening a new place on 6th Avenue. There, Big Bob and his family forged their reputation for quality barbecue, which (of course) included his now-famous white sauce. In 1972 Bob’s grandson, Don McLemore, joined the family business. Big Bob passed away one year later. In 1988 the restaurant burned to the ground. The family got itself and the restaurant back on its feet, though, saving the original neon sign and opening a new place right next door. Today, Don and his son-in-law, Chris Lilly, have dedicated themselves to cooking up some of the best BBQ in the country right there in Decatur, Alabama. Cheers!
