Betty's Irish Soda Bread for St. Patrick's Day

Betty demonstrates how to make Irish Soda Bread. This is a traditional Irish bread that is great for a St. Patrick's Day meal.

Irish Soda Bread

2 cups all-purpose flour
1 ½ teaspoons baking powder
¾ teaspoon baking soda
1 teaspoon salt
3 tablespoons sugar
1 ½ teaspoons caraway seeds
3 tablespoons butter, chilled and cut into small cubes
1 cup buttermilk
2/3 cup dark or golden raisins
cooking oil spray for pan
2 tablespoons melted butter for top

In a large bowl, mix flour, baking powder, baking soda, salt, sugar, and caraway seeds. Cut in butter, using a pastry blender or fork, until mixture is the texture of coarse cornmeal. Add buttermilk and raisins. Mix lightly, until a soft dough forms. Turn dough out on lightly floured surface. Knead gently, only a few times. Shape dough into a round. Fit evenly into 9-inch cake pan that has been sprayed with cooking oil spray. Cut dough into quarters, using a knife, cutting about 2/3 of the way through the dough. Brush top surface of dough with melted butter. Bake at 350 degrees (F) for 20 to 30 minutes, or until edges are brown and crusty and a toothpick inserted in the center comes out clean. Let bread rest in pan on a cooling rack for 5 minutes. Transfer bread to a serving plate. To serve, cut Irish Soda Bread into wedges and spread with butter.
