Karela masala in gravy, Bitter Gourd Masala Curry recipe, Stuffed Karelas in Gravy, Bharwa Karela With Curry, Karela Gravy Recipe, Pagarkai Gojju,

Ingredients
Bitter Gourd (करेला ) - 6 ( 250 gms )
Mustard oil (सरसों का तेल ) - 3 to 4 tbsp
Tamarind pulp (इमली का पल्प ) - 1 tsp
Green Coriander (हरा धनिया ) - 2 tbsp ( finely chopped )
Cumin seeds (जीरा ) - 1 tsp
Fennel seeds(सौंफ ) - 2 tsp
Turmeric powder (हल्दी पाउडर ) - 1/4 tsp
Mango powder (अमचूर ) - More than 1/2 tsp
Coriander powder ( हरा धनिया ) - 2 tsp
Asafoetida (हिंग ) - 1/2 pinch
Garam masala (गरम मसाला ) - 1/4 tsp
Red chili powder(लाल मिर्च पाउडर ) - Less than 1/4 tsp
Green Chili (हरी मिर्च ) - 1 ( finely chopped )
Salt (नमक ) - 2 tsp ( or to taste )

How to make Karela with Gravy:

1. Wash, clean the bitter gourds, scrap the peel and the pulp from it. Cut the gourd such that it is joint from below.
2. Take salt and coat it over the peeled gourds inside out, keep aside for 15 to 20 minutes.
3. After 20 minutes, put the gourds, its peel to wash twice separately. Press well, strain and keep in plate.
4. Pour some oil in a wok to heat, then add cumin seeds,asafoetida, turmeric powder, coriander powder. Add the peel too. Stir continuously and roast for 2 minutes.
5. Add garam masala, mango powder, salt. Stir regularly and roast well until ready. Take out in plate.
5. For stuffing the gourds, open the slit, put stuffing as much as it fits, press well. Stuff all the gourds likewie.
6. Pour 3 to 4 tbsp oil in the pan to heat. Arrange the bitter gourds straight in it to cook. Cover and cook for 3 to 4 minutes,keep the flame medium.
7. After few minutes flip them and roast on the other side, until golden brown on all sides. Cover and cook for 3 to 4 more minutes.Then take out in plate.
8. Add 1/2 cup water to the leftover masala in the pan. Add red chili powder, finely chopped green chili, salt and tamarind pulp.Mix all well and let it boil.
9. Once gravy boils, add some green coriander to it. Mix well. Pour the gravy over the bitter gourdsa nd let settle for 10 minutes.

Serving :
10. Mouth drooling Karela Sabzi with Gravy is ready to be relished for meal anytime.
