Christmas Turkey Brine | Steve Lamb

Steve Lamb's Christmas Turkey Brine is an excellent way to keep your turkey moist whilst retaining LOADS of flavour!

INGREDIENTS:

• 400g salt
• Black pepper
• 100g Juniper berries
• 300ml Gin
• 2 lemons
• Bulb of garlic
• Rosemary / parsley / your choice of herbs
• One Turkey

DIRECTIONS:

Add all the ingredients for the brine and put the pot on to boil for a few minutes.
After the brine has completely cooled add the turkey and leave for 48 hours.
Remove the turkey from the brine and put in a large roasting tin. Cook in the oven for 40 minutes at 220 degrees C.
Baste the turkey with the juices.
Return to the oven for 3 hours at the lower temperature of 170 degrees C.
Remove when a beautiful mahogany colour, leave to rest for 20 minutes and then carve.
