1 cup onion, diced
1 cup celery, diced
1/2 cup carrot, diced
salt & white pepper to season
1 cup brown rice
2 2/3 cups vegetable stock
2 chicken breasts
1 egg
1/4 cup fresh lemon juice
lemon rind and coriander to serve
