Active dry yeast – ½ tbsp
Lukewarm water – 6tbsp

Maida / All purpose flour – 1 cup / 130g
Sugar – 1 tsp
Baking powder – A pinch
Salt – 2 pinches
Ghee / Butter – 4 tbsp

For sugar syrup:
Sugar – 1½ cup
Water – ½ cup
Lemon juice - ½ tsp
Cardamom (crushed)

Add yeast to lukewarm water and mix well. Set aside for the yeast to get activated.

In another bowl, mix maida, 1 tsp sugar, a pinch of baking powder and two pinches of salt. Mix well.
Add ghee and yeast mixture. Mix well and make a loose dough.
Cover and let it rest in a warm place.
Wait for it to rise and turn soft.
It takes 45 – 60 minutes. It took me one hour.

To make the sugar syrup, add sugar and water to a saucepan.
Switch on the stove and melt the sugar.
Add crushed cardamom and lemon juice.
Switch off and set aside.

Heat oil in a pan.
Take small balls of risen dough and shape it into a loose circle.
Make a small hole in the center using your index finger.
Drop it into the hot oil and cook on medium flame.
Once it turns lightly golden, flip and cook both sides till golden brown.
Remove from oil and drop them in warm sugar syrup.
Remove after 10 minutes. Repeat for the rest of the dough.
Enjoy the neyy vada.

-Lemon juice is added to avoid crystalisation.
-Once the dough rises, use immediately.
