Nigerian Nkwobi (Spicy Cow Foot)

Ingredients for Nkwobi as used in the video:

- 2kg (4.4 lbs) cow foot (cut into sizeable pieces)
- 20cl (200ml) Palm Oil
- 1 tablespoon powdered edible potash (Akanwu/Kaun/Keun)
- 1 teaspoon ground Ehu seeds (Calabash Nutmeg)
- 2 tablespoons ground crayfish
- 2 habanero or scotchbonnet peppers (or to your taste)
- 1 medium onion
- 2 big stock cubes
- Salt (to taste)

For garnishing:
- Utazi leaves (use Spinach leaves if you can't buy utazi)
- 1 Onion

1. One alternative to edible potash is what is known as Ngu in Igbo. Ngu is made by burning palm fruit stalk, lots of them, to ashes. Then the ash is mixed with water and added to the palm oil like I did in the video. Ngu is even more traditional and it is much easier for you to find akanwu than Ngu.
2. Ehu seeds are hard to find outside Nigeria. If you have family or friends in Nigeria, ask them to send some to you. It is also used in pepper soup and Abacha. It does not have any alternative that I know if so just skip it if you can't find it but your Nkwobi will not taste the same.

The make of my ehu seeds and crayfish grinder is Braun. I think it has been discontinued. You can buy Krups which is a great alternative:
