Raw rice - 1 glass (Soaked for 2 hours)
Cooked rice – ½ glass + 1 tbsp (Any variety)
Grated coconut - ½ of a coconut / 4 handfuls
Shallots – 3 big
Cumin seeds – 1 tbsp
Curd / Yogurt – 1 tbsp (Optional)

Grind rice, cooked rice, grated coconut, shallots, cumin seeds and curd to a fine paste by adding water just to the level of the rice.
Grind in batches.
Add salt and mix well.
The batter must be semi thick.
Add sugar, if you prefer.
Cover and keep the batter aside in a warm spot overnight for fermentation.

Heat a pan.
Mix the batter well and pour a spoonful of it to the pan. Do not spread the batter.
Cover the pan and cook on a medium flame.
Once it is cooked, bubbles will be formed.
Flip and cook uncovered.
Transfer to a plate.
Mix the batter each time before you pour it to the pan.
Serve vellayappam warm with stew or egg curry.
