What You Need to Make an Easy Asparagus Recipe
1 lb. ASPARAGUS
SALT and BLACK PEPPER to taste
A little OIL for cooking
3-4 cloves GARLIC (finely chopped)
1 small ONION (chopped)
How to Cook a Quick Skillet Asparagus
When buying asparagus, thin is better than thick. Choose firm spears. Avoid asparagus that has a wrinkled skin, or tips that are wet and greasy looking.
Rinse and drain asparagus stalks, then snap off the bottoms of the spears to leave only the tenderest parts of the asparagus.
Heat oil on medium heat in a skillet.
Add asparagus, spreading the spears out so that they lay flat on the bottom of the pan. Leave alone for a couple of minutes to sear, then turn and sear all around. Add salt and pepper to taste.
Cook for 5 to 6 minutes, or until desired doneness, but asparagus tastes great if it’s not overcooked. Soggy asparagus = sad asparagus, right?
You can serve the asparagus as a side cooked simply with salt and pepper, or jazz it up with a little sauteed onion and garlic. Remove the cooked spears from the skillet and set aside. Add a wee bit more oil to the pan, and then add one small, chopped onion. Saute onion for 3-4 minutes, then add finely chopped garlic and saute for 1 minute more.
Return the asparagus to the skillet and toss with the onion garlic mix, then serve hot.
