Are you ready for a modified luau?! Get ready, the next few days I will be loading dishes for our luau.
4 to 5 lb. pork shoulder
2 tbsp. liquid smoke
2 tbsp. Hawaiian salt
2 large ti leaves (optional--these do not give you any flavor at all, they keep in moisture)
1 c. water
Rub pork all over with liquid smoke and Hawaiian salt, then wrap in two clean ti leaves. Place pork in slow cooker and add one cup of water to the bottom of the slow cooker and cover. Cook on high for 5-6 hours until the pork is easily shredded. When done, remove pork from slow cooker, discard ti leaves, and shred pork by hand or by using two forks. Sprinkle shredded pork with a little of the cooking liquid to season.
