__Black and White Strawberry Tuxedo Cake Directions__
Serves 10-12

Chocolate cake
¼ cup (3 oz.) chopped bittersweet chocolate http://amzn.to/2bcY4iq

2 large eggs
1 large egg yolk

Vanilla cake
2 cups cake flour
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon kosher salt

½ cup vegetable oil http://amzn.to/2aZnKSd
2 teaspoon vanilla bean paste
1 cup granulated sugar
¼ cup brown sugar
1 stick unsalted butter, softened
2 large eggs
4 large egg yolks

Vanilla Frosting
5 egg whites
1 ½ cup granulated sugar
4 sticks of unsalted butter, softened
2 tablespoons vanilla extract

Chocolate Ganache
1 ½ cups (9 oz.) chopped chocolate
½ cup heavy cream

To make chocolate cake:
Heat oven to 350 degrees F. Line a 12x15 inch sheet pan with parchment paper; set aside.

In a small bowl, combine chopped chocolate, unsweetened cocoa powder and instant coffee. Pour boiling water on top of mixture. Let sit for 1 minute. Stir to combine; set aside. In a second bowl, sift together, flour, baking soda, baking powder and salt; set aside.

In a mixer bowl, fitted with a paddle attachment, beat sugar and mayonnaise on medium high, for 2-3 minutes. Add eggs and yolk in one at a time, making sure each egg is fully incorporated before adding the next one. Beat in vanilla paste.

Turn off mixture and using large whisk, stir flour mixture in three additions, alternating with chocolate mixture (beginning and ending with flour mixture). Pour batter into prepared pan. Use an offset spatula to smooth batter to an even finish Bake at 350 degrees F for 15-20 minutes or until center of cake slightly springs back when gently touched.

To make vanilla cake:

In a large bowl, sift together flour, baking powder, baking soda and salt; set aside. In a second bowl whisk together buttermilk, oil and vanilla bean paste; set aside.

In a stand mixer bowl fitted with a paddle attachment, cream together both sugars and butter until light and fluffy, about 3-4 minutes. Add in egg yolks and eggs one at a time, making sure each egg is fully incorporated before adding the next one. Continue to beat mixture until very light and pale, about 5-6 minutes.

Turn off mixture and using a large whisk, stir in flour mixture in three additions, alternating with the buttermilk mixture (beginning and ending with the flour flour mixture). Pour batter into prepared pan. Use an offset spatula to smooth batter to an even finish. Bake at 350 degrees F for 15-20 minutes or until center of cake slightly springs back when gently touched.

To make vanilla frosting:
Place egg whites and sugar in a stand mixer bowl. Place bowl over a pot of simmering water (do not let bottom of bowl touch the water, think bain-marie), cook and stir until mixture reaches 160 degrees F. Transfer bowl to stand mixer fitted with whisk attachment. Beat until stiff peaks forms and mixture is warm to the touch, about 7 to 9 minutes.

With the mixer running, add in butter one tablespoon at a time. Beat until mixture is fluffy and thick, about 4-5 minutes total. Add vanilla extract and beat until combined. If frosting is loose, transfer bowl to the refrigerator for 10 minutes to chill and then beat for another 2- 3 minutes.

To make chocolate ganache:
Heat heavy cream to a slight simmer. Pour cream over chocolate. Set aside for 1 minute. Whisk together until fully combined.
