Ingrediens for a traditional oven roasted British Roast Beef
1 Roast Beef (1,5 - 2 kg)
Salt / Pepper
English Mustard - 2 tbsp
Preheat your oven to 110°C / 230°F Top- and bottom heat.
Remove the hard fat from the roast beef (if there is any) and season from all sides with salt and pepper then cover completely with the mustard.
Place the ME.AT into a baking dish and put into the oven (approx. 1-1,5 h) until your desired core temp. is reached ( I went for 52°C / 125°F for medium).
Then sear in a very hot pan with oil from all sides and leave to rest for 10 minutes.
