Healthy Breakfast Oatmeal Cookies (this makes two servings/ 8-12 cookies):
Combine: 2 cups of oats, 1 mashed banana, 2 eggs.
Add in ANY toppings! We love cinnamon & chocolate chips OR topping with cookie butter!
Place scoops on greased pan & bake for 15 minutes at 350
Healthy, easy, yummy shrimp salad for dinner:
Greens and any cut up veggies (we used cucumber, carrots and peppers)
Cook shrimp with trader joes elote seasoning (taco seasoning works just as well!!)
Top salad with shrimp, trader joes roasted corn and avocado
Salad dressing: Chili lime seasoning, honey & olive oil! Microwave for about 5-10 seconds to make it easier to pour!
Bread pudding dessert:
use ANY leftover bread. Perfect for almost stale bread!! Tear up into pre greased pan.
Mix together eggs, milk and any toppings (we use chocolate chips & cinnamon)
pour mixture over bread and let soak for 15-20 minutes! Perfect time to pre heat the oven!
Bake at 350 until top is golden brown! (varies on how much bread you have!)
